Marinated Vegetables

You can use any fresh vegetables you choose. Just remember mushrooms are very spongy and will soak up the marinade. I marinate them separately right before I grill them.

1/4 cup of red wine vinegar
2 tbs. olive oil
1/4 tsp. garlic powder
1 tsp thyme
1 tsp pepper

Slice vegetables desired direction.

Place in zip lock bag

Combine above ingredients, pour over vegetables in the bag, close and shake well to cover all the vegetables.

Chill 30 minutes.

If doing portabella mushrooms save a tiny amount of the mixture to marinade the mushrooms.

Spray a grill wok/pan with vegetable oil

Add vegetables and cook about 12 minutes on each side.
