Zucchini Squash Casserole

3 pounds Zucchini and Yellow Squash -- Steamed, Shredded
1/2 cup Butter -- Melted
 4 Eggs -- Beaten
 3 tablespoons Sugar
 1 teaspoon Baking Powder
 1 Onion (Large) -- Chopped Finely
1/4 pound Saltines -- Crushed

Drain the steamed and shredded zucchini and yellow squash WELL!  Saute the onion in the butter and add that
to the bowl of shredded squashes and mix well.  Add the eggs, sugar, baking powder, and salt and pepper to
taste.  Stir in the cracker crumbs and put the mixture into a Pam'd casserole dish. Bake for 25 minutes at 325.

NOTE:  If the dish will be going somewhere, mix all of the ingredients EXCEPT the baking powder and take
UNBAKED to the oven where it will be baked.  Before putting it in the oven, add the baking powder, stir and then bake per the directions above.
